Overview
Ant’s minimal intervention winemaking approach crafts a natural expression of the grapes and terroir: no finings on the Sauvignon Blanc for example. The fruit comes in with great intensity, and is made as dry as possible. Acidity is balanced with old-world techniques and bespoke lees work for a natural richness. Some barrel fermentation adds complexity.
An elegant bouquet of delicate tropical fruits and soft florals,
subtly underscored by fresh-cut grass and a whisper of herbaceous
intrigue.
In contrast to the gentle aromatics, the palate delivers a
vibrant tide of fruit density and zesty citrus tension. Notes of lime
weave through a finely textured mouthfeel, finishing crisp and dry.
There’s a layered complexity at play: classic Ant Moore in style, with
a refined textural evolution that will sing with food.
